Vault City Brewing

Vault City Brewing is a trailblazing Edinburgh-based brewery, founded in 2018 by former IT consultant and home-brewer Steven Smith‑Hay, and is now Scotland’s largest sour-beer producer. Known for its "Modern Sour Beer,” Vault City crafts intensely fruit-forward, mixed-fermentation sours (e.g. Iron Brew, Strawberry Sundae, Triple Fruited Mango), regularly releasing new, inventive brews exploring dessert, cocktail, and fruit mash-ups. They’ve embraced bold innovation—from an Overnight Oats sour to Buckfast-inspired Blackberry Buckie, winning awards and national distribution via Tesco and Morrisons. Vault City also leads in progressive workplace culture, offering a four-day work week and paying at least the London Living Wage. Their Haymarket taproom, The Wee Vault, features 24 taps and a bottleshop, maintaining strong ties to local community and hospitality.
